What does the percentage mean in a morph. Example Banana 66% Het Pied?

It’s the chance that it’s a het. Ultimate it either is a het or it isn’t but the percentage lets you know how likely it is het.

To clarify a bit more, a 66% het pied does not mean it has a 66% chance of passing down the pied gene, it means the animal has a 66% chance of BEING het Pied. Ultimately at the end of the day it will either prove out to be het pied (100%) or not het pied (0% chance). 66% het means that both parents were het pied, so all of the offspring have a 66% chance of being het for pied. I try to notate mine as ‘66% pos het pied’ to make it more clear it’s the possibility of carrying the het at all, and not the chance of passing it down.
