Instead of the wait-list option as the only feature is there any way to get notifications when a specific breeder has a species in so we can become aware when something becomes available?

If you select a seller in the main search, then you can save that search and get email and/or mobile alerts. Then, any time that seller posts an ad of that species (or any other specific search terms, like a morph or sex) then you will get an alert about it.
